About

After a decade of working as a French pastry chef and specializing in creating vegan options, I knew my most special recipe was my Vegan Croissant. I would argue that even the 'normal' croissants you can find in chains don't come close to the crispy, fluffy, buttery layers I’ve perfected with this process. For years, I sold these pastries wholesale across the country and was in discussions with multiple chains to create signature vegan pastries for all of their locations. Then the pandemic happened, and plans changed. But I truly believe it was for the best; I never wanted to run a factory and have my products mass-produced by the thousands. All I've ever wanted was for anyone in the world to enjoy truly outstanding, delicious pastries that suit their lifestyle choices, dietary requirements, or allergies. I also wanted to share my deep, true love for baking and how healing it can be to make your own food from scratch, even if you're someone who's never baked before. More than just enjoying the best smell in the world—fresh croissants in the oven, filling your house on a Sunday morning with no effort (thanks to the freezing guide included in the course)—this is also a commitment to practicing self-care. This course is beginner-friendly, requires no special equipment, and contains step-by-step video tutorials with helpful voiceovers, along with a complete handbook detailing everything you need to master the basics of viennoiserie: croissants and pain au chocolat. All the ingredients are easily accessible in supermarkets wherever you are in the world. There’s a butter block guide to help you find the best brand near you, and even a recipe to make your own butter block if you can't find the recommended options in your country!
