200g vegetable oil
130ml soy milk
100ml blood orange juice
zest of 3 blood oranges
230g sugar
420g flour
7g baking powder
3 mashed bananas (medium size)
1 blood orange
50g icing sugar
Preheat the oven at 180c for convection 170 for fan
Mix together the oil, sugar, milk, blood orange juice, zest and mashed bananas
Add the flour and baking powder
Combine all and pour into a 2lb lined loaf tin
Bake for 60mn or until a knife comes out clean
Let it cool down
Cut the blood orange in half and make slices with one half
Combine the icing sugar with the juice of the remaining half
Pour the icing on the cake and top with orange slices
