200g vegetable oil
230ml soy milk
230g sugar
1 pinch salt
420g flour
7g baking powder
3 ripe bananas (medium size, mine were roughly 130g each )
200g chopped chocolate of your choice
Preheat the oven at 190c for convection 180 for fan
Mash the bananas until smooth
Mix together the oil, sugar, milk, salt and bananas with a whisk
Add the flour and baking powder
Chop the chocolate and combine (don't overmix!)
Scoop into muffin cases (I like to leave empty spaces in between the muffins so the air circulate better)
Bake for 25 mn or until a knife comes out clean
